This dish takes me back to my childhood. It was created by my mom, aka “nana,” and passed along to us. Of course, the recipe was never written down. It’s a “dump this” and “add that until it looks right”. So, I think I have it mastered now and want you to enjoy it as well. This easy recipe is quick to make and oh so yummy. It’s even better served as a leftover. It just gets better with time.

Ingredients

  • 1 pound Windmill Acres ground beef

  • 1 28 oz. can of diced tomatoes

  • 1 can of Hunt’s tomato sauce for meatloaf

  • 1 Yellow onion

  • 1 green pepper

  • 1 16 oz. box of medium shells

  • 1/2 cup of ketchup

Directions

  1. Brown ground beef with pepper and onion.
  2. While the beef mixture is cooking, cook the pasta in a separate pot and drain.
  3. Once beef is browned, add the diced tomatoes and the meatloaf sauce. Let simmer.
  4. Add the mixture to the pasta.
  5. Add ketchup and mix, and heat for about 30 minutes.
